Get cooking in France, EVE Day #ENV4env


 

Meet Ellen, a sweedish volunteer who arrived in France for 8 months to discover and learn more about Europe. No need to hesitate, Ellen is already an adept of green mobility, she comes to work either by bike or on foot, you will probably not see her in a car except for long trips.


Ellen knows France well, she has already done two exchanges, one in Paris and the other one in Bordeaux but this time she wanted to come and discover the South West of France. Here, one of the things that differs from the Nordic countries is surely the accessibility of vegetarian, vegan, gluten free or any other diet food. Especially in a small town, you sometimes have to be a bit imaginative.


Ellen is vegetarian for years and to celebrate Environment Week she wanted to share with us a brand new recipe she has been experimenting with her friends: vegetarian spring rolls with peanut butter sauce!


A little more practice and they might have a chance to appear in the Michelin Guide!




Spring rolls recipe :


INGREDIENTS:

  • Dried spring roll rice paper wrappers

  • Toasted sesame seeds

  • Carrots

  • Peppers

  • A few leaves of green salad

  • Shallot / Garlic

  • 1 block firm (non-silken) tofu

  • 4 teaspoons of peanut butter

  • 1 teaspoon of ginger powder

  • 4 teaspoons of soy sauce

  • 2 teaspoons of lemon juice

  • Water

DIRECTIONS:

  1. Clean and cut all your vegetables into thin strips of about 7cm in length. Execpt fot the lettuce, you will need wider lettice leaves.

  2. Cut your block firm of tofu into thin strips.

  3. Toast your sesame seeds if they are not already toasted.

  4. Take a rice paper wrapper, place it on a clean plate and moisten it with water.

  5. Assemble your spring roll, starting with a leaf of salad in the center and add toasted sesame seeds, pepper, carrots and tofu on top.

  6. The width of your fillings will determine the width of the spring roll. You want to leave a couple inches open on the two sides for wrapping purposes.

  7. Gently pull the bottom of the wrapper up and over the lower portion of the filling. Try to keep the fillings compact as you roll upwards, just until the fillings are enveloped.

  8. Pull each side over to enclose the filling. Continue wrapping upward until your spring roll is fully wrapped! Moisten slightly if necessary so that the roll is well closed.

Preparation of the Peanut sauce:

  1. Mince the shallot and garlic.

  2. Mix all the ingredients as follows: peanut butter, soy sauce, lime, shallot, garlic, ginger powder.

  3. Stir the mixture together.

  4. Finish with a little bit of water to mix again.
